I'm Corno Cloete

​Highly accomplished professional chef with cordon bleu training; skilled in classical techniques and modern cooking styles. Over 25 years of experience. Comprehensive background in development of wide range of menus for domestic and international palates. Excellent proficiencies in restaurant and kitchen management. Hands-on experience with food inventories and cost controls. Resourceful and adaptable in rapidly changing kitchen and dining room operations. Specialist Function and Relief/Contract  Chef.

famous Karoo roosterbrood served with biltong and herb butters

 

Spinach and Chickpea Fritters (V)

served with Parmesan zucchini, mint yoghurt and a sweet chili sauce

 

Free-range Klein Karoo Cajun Chicken Salad 

warm marinated free-range chicken, bacon bits, croutons and cucumber with salad greens and a herb dressing

slow-roasted in red wine, herbs, root vegetables and butter beans, served with mash or rice
